摘  要:文章旨在研究冬季室内饲养的藏牦牛日粮中添加经过热处理的油菜籽对干物质摄取量、体重变化和肉质的影响。试验选择18只3年的牦牛[平均体重为(115.3±4.28)kg],随机分为两组,分别为普通菜粕日粮和热处理油菜籽日粮。在经过14 d的预饲试验后,牦牛进行为期120 d的正式试验。结果:处理组末重较对照组显著提高6.29%(P<0.05),料重比显著降低5.26%(P<0.05)。热处理菜籽组肌肉剪切力较对照组显著降低34.73%(P<0.05),同时热处理油菜籽组多不饱和脂肪酸、n-3多不饱和脂肪酸及多不饱和脂肪酸与饱和脂肪酸比较均显著提高(P<0.05),但对照组肌肉C15:0脂肪酸浓度较处理组显著提高107.14%(P<0.05)。结论:日粮添加热处理的油菜籽可以改善牦牛末重和饲料转化率。此外,热处理的菜籽可以降低肌肉剪切力,提高多不饱和脂肪酸含量。The purpose of this study was to evaluate the effects of heat-treated rapeseed on dry matter intake,body weight and meat quality of yak raised indoors in winter.Eighteen 3-years-old yaks(with an average weight of 115.3±4.28 kg)were selected and randomly divided into two groups,the normal rapeseed diet and the heat-treated rapeseed diet,respectively.After 14 days of pre-feeding,the yak was formally tested for 120 days.Results:compared with the control group,the final weight of the treatment group was significantly increased by 6.29%(P<0.05),and the ratio of feed to weight was significantly decreased by 5.26%(P<0.05).Heat treatment of rapeseed group muscle shear force significantly reduced by 34.73%than the control group(P<0.05),at the same time,heat treatment rapeseed groups of polyunsaturated fatty acids,n-3 polyunsaturated fatty acids and polyunsaturated fatty acids compared with saturated fatty acids were significantly increased(P<0.05),but the control group muscle C15:0 fatty acid concentration significantly increased by 107.14%in the processing group(P<0.05).Conclusion:Adding heat treated rapeseed to the diet can improve the final weight and feed conversion of yak.In addition,heat-treated rapeseed can reduce muscle shear force and increase polyunsaturated fatty acid content.
