摘 要:目的设计一种新型胶囊乳制品包装的滤水盘结构,以提高胶囊乳制品奶泡丰富度,解决现有胶囊乳制品出泡不足的问题。方法利用Autodesk Inventor设计胶囊结构,并使用3D打印机制作模型,以起泡性和泡沫稳定性为评价指标,通过实验验证滤水盘结构对胶囊乳制品泡沫品质的影响。结果在所有滤水盘结构中,3层分流槽-柱形导流柱-圆孔滤水盘对泡沫丰富度的影响最优,该新型胶囊乳制品包装滤水盘结构可以明显提高乳制品起泡性,起泡性最高可达88%,较原胶囊提高了38%;此时泡沫稳定性为80%,较原胶囊降低了12%。结论该新型胶囊乳制品包装滤水盘结构可以明显提高胶囊乳制品泡沫丰富度,利用胶囊咖啡机即可打出丰富的奶泡。The paper aims to design a new type of water filter tray structure for capsule dairy product package to increase the richness of milk foam in capsule dairy products and solve the problem of insufficient foaming of existing capsule dairy products. The capsule structure was designed with Autodesk Inventor and a 3D printer was used to make the model. The foamability and foam stability were used as evaluation indicators. The effect of the water filter tray structure on the foam quality of the capsule dairy products was verified by experiments. Among all water filter tray structures, the "3 split groove layers"-"cylindrical guide column"-"round holes" water filter tray had the best effect on the richness of the foam. This new water filter tray structure of capsule dairy product package could apparently improve the foaming characteristic of dairy products. The foamability was up to 88%, which was 38% higher than the original capsule;and the foam stability was 80%, which was 12% lower than the original capsule. The new water filter tray structure for capsule dairy product package can obviously increase the foam richness of capsule dairy products, and by using the capsule coffee machine, we can make rich milk foam.
