摘  要:目的:对比分析泸州合江5种不同品种青果中没食子酸和微量元素含量的差异,为青果的质量评价提供依据。方法:采用HPLC法测定青果中没食子酸的含量,使用Kromasil C18高效色谱柱,流动相为甲醇-0.1%磷酸(5:95),流速为1.0 mL·min-1,检测波长为254 nm,柱温25 ℃;采用石墨原子吸收色谱法和火焰原子吸收光谱法等方法对青果中的9种微量元素进行检测。结果:丁香果中的没食子酸含量较高,含量达1.0124 mg·g-1;小梭子的含量偏少,含量为0.0964mg·g-1。不同品种青果中的微量元素存在差异,Mn、Zn、Ca、Fe、Cr、Mg、Cu的范围分别为16.1 ~23.1 mg·kg-1、8.3~11.6 mg·kg-1、1936~2926 mg·kg-1、45.7 ~53.9 mg·kg-1、0.14 ~0.24 mg·kg-1、1614 ~2926 mg·kg-1、4.4 ~5.7 mg·kg-1,以Ca、Mg最为显著,其中正宗梭子的Ca和小梭子的Mg均达到2926 mg·kg-1,Hg、Sn均未检测出。结论:泸州合江不同品种青果产品安全,其含有人体有益和必须的氨基酸,可为青果的质量评价提供一种思路。Objective:The contents of gallic acid and trace elements in five different varieties of Qingguo in Hejiang,Luzhou were compared and analyzed to provide basis for the quality evaluation of Qingguo.Method:The content of gallic acid in Qingguo was detected by HPLC.A Kromasil C18 high performance chromatography column was used.The mobile phase was methanol-0.1% phosphoric acid (5:95).The flow rate was 1.0mL·min-1.The detection wavelength was 254 nm,and the column temperature was 25 ℃.Graphite atomic absorption chromatography and flame atomic absorption spectrometry were used to detect nine trace elements in Qingguo.Result:The content of gallic acid in Dingxiang fruit was higher with the content of 1.0124 mg·g-1.the content of Xiaosuozi was less with the content of 0.0964mg·g-1.There were differences in trace elements contents in different varieties of Qingguo.The contents ranges of Mn,Zn,Ca,Fe,Cr,Mg,Cu were 16.1 mg·kg-1 ~ 23.1 mg·kg-1,8.3 mg·kg-1 ~ 11.6 mg·kg-1,1936 mg·kg-1 ~ 2926 mg·kg-1,45.7 mg·kg-1 ~ 53.9 mg·kg-1,0.14 mg·kg-1~ 0.24 mg·kg-1,1614 mg·kg-1 ~ 2926 mg·kg-1,4.4mg·kg-1~ 5.7mg·kg-1,with most significant difference of Ca and Mg.The content of Ca of authentic Suozi and Mg of Xiaosuozi reached 2926 mg·kg-1.Neither Hg nor Sn was detected.Conclusion:Qingguo products of different varieties in Hejiang,Luzhou are safety.They contain beneficial and essential amino acids for the human body,which can provide an idea for the quality evaluation of Qingguo.
