摘  要:以养生酒的余酒为研究对象,比较低温减压蒸馏(闭环式低温蒸馏回收)、常压蒸馏(超重力精馏、甑桶蒸馏)、膜过滤(有机物优先透过膜)技术对余酒回收的质效。通过综合比较所回收酒体质量(感官和理化)、回收率、能耗等指标,发现闭环式蒸馏工艺可使余酒回收质效有较大提升。采用50~55℃低温减压蒸馏,酒体感官、质量有较大改善,能耗较低,酒体回收率可达91.7%以上。In this study we explored the quality and efficiency of residual liquor recovery technologies,including low-temperature and vacuum distillation(closed-loop and low-temperature distillation),atmospheric distillation(hypergravity distillation,steamer distillation),and membrane filtration(organic matter priority membrane).Through comprehensive comparison of the liquor quality(sensory and physiochemical indexes),recovery rate,and energy consumption,we found that closed-loop and low-temperature distillation recovery was the best method for residue liquor recovery.Low-temperature and vacuum distillation at 50℃to 55℃could improve the quality of the recovered liquor and reduce energy consumption,and the recovery rate of the residue liquor could reach up to 91.7%.
