摘 要:【目的】为了筛选黄酮物质含量高且抗氧化活性强的枣种质,从而为创制高黄酮含量枣种质及枣果深加工提供参考依据。【方法】以国家枣种质资源圃中50份具有代表性的枣种质脆熟期果实为试材,分析各种质果实中总黄酮的含量,分别采用FRAP法、DPPH法、ABTS法这3种评价方法对不同枣种质果实黄酮提取液的抗氧化能力进行了测定,分析了黄酮含量与抗氧化活性间的相关性,并以50份枣种质果实中的黄酮含量为依据进行了聚类分析。【结果】1)不同枣种质间果实中黄酮含量的差异显著,其含量分布范围为1.46~22.50 mg·g^-1,平均含量为5.78 mg·g^-1,其变异系数为68.26%;含量最高的北京老虎眼其黄酮含量是含量最低的羊奶枣的15.41倍。2)采用FRAP法、DPPH法、ABTS法评价得出的结果表明,50份枣种质果实黄酮提取液均有一定的抗氧化活性,50份枣种质中,综合抗氧化能力较强的种质有北京老虎眼、溆浦圆酸枣、献县酸枣、算盘枣、北京鸡蛋枣等。3)枣种质果实中的黄酮含量与分别以FRAP法、DPPH法、ABTS法评价得出的果实黄酮提取液的抗氧化能力之间均呈极显著正相关,分别以FRAP法、DPPH法、ABTS法评价得出的果实黄酮提取液的抗氧化能力之间亦呈极显著正相关。4)通过聚类分析初步确立了枣种质果实黄酮含量的分级标准(高含量、中等含量、低含量),并初步筛选出果实黄酮含量较高的枣种质12份。【结论】不同枣种质间果实中黄酮含量的差异显著,黄酮含量与其提取液的抗氧化活性呈极显著正相关;果实中的黄酮含量,酸枣显著高于枣。【Objective】Jujube germplasms with high flavonoid and strong antioxidant activity were screened to provide a reference for creating high flavonoid varieties and processing jujube fruits intensively.【Method】Crisp ripening fruits of 50 germplasms from national jujube germplasm resources repository were used as test materials,total flavonoid content were analyzed,the antioxidant activities of each germplasm were evaluated using FRAP,DPPH and ABTS methods,and the correlation between flavonoid content and antioxidant activity were analyzed and the cluster analysis was carried out to screen the excellent germplasms.【Results】1)The flavonoid contents in different germplasms were significantly different,which distribution range was 1.46-22.50 mg·g^-1,and the average content was 5.78 mg·g^-1 with variation coefficient 68.26%.The content of the highest‘Beijinglaohuyan’was 15.41 times of the lowest‘Yangnaizao’.2)The flavonoid extracts had antioxidant activity evaluated by FRAP,DPPH and ABTS methods,and‘Beijinglaohuyan’,‘Xupuyuansuanzao’,‘Xianxiansuanzao’,‘Suanpanzao’,‘Beijingjidanzao’had stronger antioxidant capacity.3)The total flavonoid contents in jujube germplasm fruits were significantly positively correlated with the antioxidant activities,and three antioxidant capacities had significantly positively correlations evaluated by FRAP,DPPH and ABTS methods.4)The grading index of flavonoid content in jujube germplasms fruits was established preliminarily,and 12 excellent jujube germplasm with higher flavonoid content were selected.【Conclusion】The flavonoid content in different jujube germplasms are significantly different.The flavonoid content is positively correlated with antioxidant activity.The flavonoid content in sour jujube is significantly higher than in that in jujube.
