摘 要:目的分析某铁路集团公司辖区餐饮单位消毒餐(饮)具卫生状况,为加强卫生监督管理及下一步对食品从业人员培训重点提供依据。方法根据GB 14934-2016食品安全国家标准消毒餐(饮)具要求,2017~2019年对辖区内餐饮单位消毒餐(饮)具进行大肠菌群和沙门氏菌检测,用Minitab15统计软件对数据进行分析。结果2017~2019年检测辖区内餐饮单位消毒餐(饮)具4100份,总的合格率为89.85%(3684/4100),其中大肠菌群合格率为89.90%,沙门氏菌合格率为100.00%。2017~2019年合格率分别为91.49%(860/940)、92.94%(1171/1260)、87.00%(1653/1900)。2019年合格率较2017、2018年有所降低;按季度统计,第一、二、三、四季度合格率分别为94.18%(1004/1066)、84.35%(830/984)、86.19%(824/956)、93.78%(1026/1094)。一、四季度合格率高于二、三季度,差异有统计学意义(P<0.05);盘、碗、口杯、一次性消毒餐具的合格率分别为87.38%(1433/1640)、87.74%(1439/1640)、98.00%(392/400)、100.00%(420/420)。口杯、一次性消毒餐具合格率高于盘、碗,差异有统计学意义(P<0.05);职工食堂、列车餐车、车站供餐单位的合格率分别为92.56%(1518/1640),86.20%(1586/1840),93.55%(580/620)。列车餐车合格率低于职工食堂、车站供餐单位。结论总体卫生状况良好,应加强对列车餐车餐(饮)具监管;重点监管二、三季度餐(饮)具消毒情况。Objective To analyze the sanitation status of disinfected tableware(drinking utensils)in the jurisdiction of a railway group company,so as to provide the basis for strengthening hygienic supervision and management and the next step of training for food practitioners.Methods According to GB 14934-2016 National Standard for Food Safety,the coliform and Salmonella of the sterilized tableware during 2017-2019 were detected randomly,and the data were analyzed with Minitab15 statistical software.Results There were 4100 sterilized catering utensils during 2017-2019,the total qualified rate was 89.85%,including 89.90%for coliform and 100.0%for salmonella.From 2017 to 2019,the qualification rates was 91.49%(860/940),92.94%(1171/1260)and 87.00%(1653/1900)respectively.It in 2019 was lower than that in 2017 and 2018;according to quarterly statistics,the qualified rate in the first,second,third and fourth quarters was 94.18%(1004/1066),84.35%(830/984),86.19%(824/956),93.78%(1026/1094).In the first and fourth quarters,the qualified rate was higher than that in the second and third quarters(P<0.05);the qualified rate of dish,bowl,mouth cup and disposable disinfection tableware was 87.38%(1433/1640),87.74%(1439/1640),98.00%(392/400)and 100.00%(420/420)respectively.The qualified rate of mouth cup and disposable sterilized tableware was higher than that of dish and bowl(P<0.05);it of staff canteen,train dining car and station catering units was 92.56%(1518/1640),86.20%(1586/1840)and 93.55%(580/620),it of train dining car was lower than that of staff canteen and station catering unit.Conclusion The overall health condition is good,the supervision of dining car and catering utensils should be strengthened;focus on the supervision of the disinfection of dining(drinking)utensils in the second and third quarters.
