摘 要:蛋白质和多糖是表征国家地理标志产品兰州百合的关键营养指标,文章重点探索采用近红外光谱分析技术结合化学计量学方法,建立快速检测兰州百合关键营养指标定量分析模型的可行性。实验收集兰州百合样本共81个,采用多种光谱预处理方法分别结合PCR和PLS优化建立兰州百合蛋白质和多糖定量分析模型。其中,基于OSC预处理建立的蛋白质和多糖PLS/PCR定量分析模型相对于其他光谱预处理模型性能参数较优;而基于PLS建立的蛋白质和多糖定量模型指标优于PCR模型,蛋白质PLS模型相关系数(R_p)为0.924,预测均方根误差(RMSEP)为0.878;多糖PLS模型的相关系数(R_p)为0.920,预测均方根误差(RMSEP)为1.898。实验结果表明,将近红外光谱技术用于兰州百合关键品质的快速定量分析具有光明的应用前景,有望为兰州百合关键营养品质的快速评价提供新方法。Protein and polysaccharide are the key nutritional indicators of national geographical indication product Lilium Lanzhou.This paper focuses on the feasibility of establishing a quantitative analysis model for rapid detection of key nutritional indicators of Lilium Lanzhou by near infrared spectroscopy combined with chemometrics.A total of 81 samples of Lilium Lanzhou were collected,and the quantitative analysis model of protein and polysaccharide was established by PCR and PLS.Among them,PLS/PCR quantitative analysis model of protein and polysaccharide based on OSC pretreatment is superior to other spectral pretreatment models in terms of performance parameters,while PLS based quantitative model of protein and polysaccharide is superior to PCR model in terms of indicators,the correlation coefficient(R_p)of protein model is 0.924,RMSEP is 0.878,and the correlation coefficient(R_p)of polysaccharide model is 0.920,RMSEP is 1.898.The results show that NIRS has a bright prospect in the rapid quantitative analysis of key quality of Lilium Lanzhou,and it is expected to provide a new method for the rapid evaluation of key nutritional quality of Lilium Lanzhou.
