摘  要:冬枣营养丰富,但是常温下不耐贮藏,导致其供应期短,因此,研究冬枣采后的病害防治对于延长鲜果供应期、提高采后收益尤为重要。采用离体试验法分离筛选对冬枣采后浆胞病菌具有拮抗效果的酵母,并初步评价其对冬枣贮藏保鲜效果。结果从几种水果表面分离筛选获得6株拮抗酵母菌,其中酵母菌株S24对冬枣浆胞病菌抑菌圈直接达18.9 mm,且对大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌均具有较好的拮抗作用;冬枣低温贮藏试验表明,接种酵母菌S24悬液可有效地降低冬枣腐烂率,减缓冬枣贮藏期果实维生素C损失,较好保持冬枣贮藏期果实硬度,具有较好的应用价值。Winter jujube(Zizyphus jujube Mill)is rich in nutrition,but has a short shelf life under normal temperature and hence a short supply period.Research in control of postharvest diseases infecting winter jujube fruit is important to prolong the shelf life of winter jujube for higher postharvest income.An in vitro test method was used to isolate and screen yeasts that have antagonism effect on Alternaria spp.attacking postharvest winter jujube fruits.,and the effect of the yeasts isolated on the storage of winter jujube was evaluated..Six strains of antagonism yeasts were isolated from the fruit surface of several species of fruits.Among the 6 strains yeast strain S24 showed an inhibition zone against Alternaria spp.with a diameter of up to 18.9 mm,and it also had good antagonism effect on E.coli,Staphylococcus aureus and Bacillus subtilis.The low temperature storage experiment for winter jujube fruits showed that inoculation of the winter jujube fruits with the yeast strain S24 suspension effectively reduced the decay rate,slowed down the vitamin C loss,and keep the fruits firm during the storage period.So this yeast strain has a high application value.
