摘　　要：文章主要介绍了山西省辣椒加工产业的现状、区域分布特点及加工企业情况,对辣椒加工产业发展中存在的问题深入分析并提出发展方向和解决方法。对大力推进辣椒产业深加工,延长产业链,提高辣椒的经济效益,增加农民经济收入助力,乡村振兴有重要意义。This paper introduces the current situation, regional distribution characteristics and processing enterprises of pepper processing industry, analyzes the problems existing in the development of pepper processing industry and puts forward the development direction and solutions. Vigorously promote the deep processing of pepper industry, extend the industrial chain, improve the economic benefits of pepper, increase farmers’ economic income and help rural revitalization.
