摘 要:通过国家标准方法和快速检测方法测定水溶液、糖溶液、食糖产品中的硝酸盐和亚硝酸盐含量,对快速检测方法检测硝酸盐和亚硝酸盐含量的精确性和回收率进行分析。结果表明快速检测方法测定硝酸盐水溶液的回收率为94.5%~104.25%,亚硝酸盐水溶液的回收率为100.83%~110.00%,快速检测方法和国家标准方法测定食糖产品的硝酸盐含量两种方法间的相对偏差小于10%,测定食糖产品的亚硝酸盐含量两种方法间的相对偏差小于4%,且两种方法的检测结果无显著差异,符合国家标准要求。快速检测方法用于食糖产品中硝酸盐和亚硝酸盐的快速定量测定结果准确稳定,可在各大糖厂推广使用,对规范产品检验方法和提高生产效率具有积极意义。The contents of nitrate and nitrite in water solution,sugar solution and white granulated sugar were determined by the national standard method and a rapid detection method,and the accuracy and recovery rate of the rapid detection method were analyzed. The results showed that the recovery rate of nitrate water solution was 94.5% ~ 104.25%,the recovery rate of nitrite water solution was 100.83% ~ 110.00%. For determination of nitrate and nitrite content of white granulated sugar,the relative deviation between the national standard method and the rapid detection method is less than 10% and 4%,respectively. The test results of two methods had no significant difference,as to meet the requirements of national standards. The rapid detection method is suitable for the determination of nitrate and nitrite in white granulated sugar in manufacturing sugar factories,and the results are accurate and stable. It has a positive significance for standardizing product inspection methods and improving production efficiency.
