摘　　要：本研究通过实验室模拟预浸渍过程,以国际通行标准污渍板为测试材料,探索了蛋白酶和淀粉酶在浸渍剂中应用的可行性。结果表明,含有淀粉酶和蛋白酶的浸渍剂组合在绝大多数情况下都完胜单独的浸渍剂浸洗效果,从一定程度上说明酶制剂在中国的商用洗碗领域大有潜力可挖。In this research,we utilize standard tiles with stains to simulate the soaking process in lab,investigate the potential benefit of enzyme applications in pre-soaking detergent.The results show that the combination of protease and amylase has better soaking cleaning performance than single use of soaking agent.To some extent,the application of enzyme in warewash field has huge potential.
