摘  要:综述了水解胶原蛋白的相关知识和水解胶原蛋白产品的生理作用,介绍了在生牛乳中添加水产品下脚料提取的水解胶原蛋白,经发酵制成水解胶原蛋白发酵酸牛乳的益处,并对水解胶原蛋白在发酵乳行业中的应用前景进行了展望。This paper reviewed the relevant knowledge of hydrolyzed collagen and the physiological functions of hydrolyzed collagen products,the benefits of hydrolyzed collagen extracted from the leftovers of aquatic products in raw cow’s milk were introduced,and the benefits of hydrolyzed collagen fermented sour milk were obtained through fermentation,and the prospect of the application of hydrolyzed collagen in fermented milk industry was forecasted.
