摘 要:为研究枯草芽孢杆菌对AA肉仔鸡抗氧化功能和肉品质的影响,试验选取1日龄AA肉仔鸡300只,随机分为5组,分别为空白对照组(基础日粮)、抗生素对照组(基础日粮中添加林可霉素4 mg/kg)、试验Ⅰ、Ⅱ、Ⅲ组(分别在基础日粮中添加枯草芽孢杆菌菌粉0.02%、0.06%、0.10%)。结果表明:AA肉仔鸡日粮中添加0.10%枯草芽孢杆菌菌粉能极显著提高血清谷胱甘肽过氧化物酶(GSH-Px)活性(P<0.01),显著提高血清总抗氧化能力(T-AOC)和总超氧化物歧化酶(T-SOD)活性(P<0.05);枯草芽孢杆菌菌粉0.06%、0.10%可显著提高肉鸡屠宰率(P<0.05),但对胸肌率、腿肌率和腹脂率无显著影响(P>0.05);0.06%、0.10%枯草芽孢杆菌菌粉可极显著提高胸肌亮度值(L^*)、红度值(a^*)和黄度值(b^*)(P<0.01),但对pH值、剪切力、滴水损失影响均不显著(P>0.05)。研究表明,枯草芽孢杆菌具有改善肉鸡抗氧化功能和肉品质的作用,且以添加量为0.1%效果较佳。To study the effect of Bacillus subtilis on the meat quality and serum antioxidant function of AA broilers,300 one-day-old AA broilers were randomly divided into five treatment groups:blank control group(basic diet),antibiotic control group(basic diet with lincomycin 4 mg/kg),testⅠ,ⅡandⅢgroups(basic diet with Bacillus subtilis powder 0.02%,0.06%,0.10%).The results showed that 0.10%Bacillus subtilis powder could significantly increase the activity of GSHPx(P<0.01),the activity of T-SOD and T-AOC were significantly increased by adding 0.10%of Bacillus subtilis powder(P<0.05).There was no significant effect on the pectoralis rate and leg muscles rate and abdominal fat rate by adding Bacillus subtilis powder(P>0.05).0.06%and 0.10%Bacillus subtilis powder could significantly increase the L^*value,a^*value and b^*value(P<0.01),but had no significant effect on pH value,shear force and water loss(P>0.05).The results showed that Bacillus subtilis could improve the antioxidant function and meat quality of broilers,and the best additive contents was 0.1%.
