摘  要:同安封肉是厦门同安传统名菜,属于闽菜系。此菜在当地颇有名气,每当人们办喜事或建新房,举办筵席,都忘不了"封肉"。通过借鉴传统加工工艺,对同安封肉常温软包装罐头的生产加工工艺进行研究,建立标准化流程,既能方便食用,又能延长保质期。Tongan seal meatwasa famous traditional dish in Tongan Xiamen,and it belonged to Fujian cuisine.This dish was quite famous in the local area,andseal meat cannot be missed whenever there was an event such as wedding and housewarming.The traditional processing technology was referenced,and production and processing technologyof Tongan seal meat canin soft package at room temperature was studied,andstandardized process was established,which could not only be easy to eat,but also couldextend the shelf life.
