摘　　要：果胶酶作为世界四大酶制剂之一,在工业生产中有着重要应用。本文从产果胶酶菌株的筛选、育种、生产工艺条件优化以及果胶酶固定化4个方面进行综述,为相关果胶酶的研究工作提供理论借鉴。As one of the four major enzyme preparations in the world,pectinases have important applications in industrial production.This article reviews the selection of pectinase-producing strains;the breeding of pectinaseproducing strains;the optimization of production process conditions;the research on pectinases immobilization,providing a theory for the research work of related pectinase learn from.
