摘 要:兴义矮脚鸡是兴义市独具特色的地方优良鸡种,肉质鲜美本文以兴义矮脚鸡为研究对象,采用高效液相色谱法测定其肌苷酸含量。结果表明:兴义矮脚公鸡胸肌、腿肌中肌苷酸含量分别为2.1645g/kg、1.5570g/kg,母鸡胸肌、腿肌中肌苷酸含量分别为2.1391g/kg、1.1550g/kg,矮脚鸡胸肌的肌苷酸含量略高于腿肌的肌苷酸含量。为兴义矮脚鸡的开发利用提供科学依据。Xingyi bantam,as a fine local strain of chickens,is known for its delicacy.In this study,high performance liquid chromatography(HPLC)was applied to analyze the content of inosinic acid in Xingyi bantam.The results showed that the inosinic acid content of breast muscle and leg muscle of the rooster was 2.1645 g/kg and 1.5570 g/kg,respectively.The corresponding contents of the hen was 2.1391 g/kg and 1.1550 g/kg,respectively.The content of inosinic acid in breast muscle of Xingyi bantam was slightly higher than that in leg muscle.This study provides a scientific basis for the development and utilization of Xingyi bantam.
