乌克兰鳞鲤“津新1号”肌肉营养成分分析与品质评定

摘　　要：利用国标生化方法对乌克兰鳞鲤“津新1号”肌肉营养成分进行了测定分析。结果显示,乌克兰鳞鲤“津新1号”肌肉(鲜样)中蛋白质含量为18.00 g/100 g、脂肪含量为5.60 g/100 g;肌肉中含有18种氨基酸,总量(TAA)为16.54 g/100 g,其中8种必需氨基酸(EAA)的含量为6.91 g/100 g,4种鲜味氨基酸的含量为6.27 g/100 g,分别占氨基酸总量(TAA)的41.78%、37.91%,必需氨基酸(EAA)与非必需氨基酸(NEAA)的比值为71.75%,符合FAO/WHO理想蛋白源评价标准;肌肉中富含镁、锌、硒等元素;肌肉中含有23种脂肪酸,饱和脂肪酸(SFA)占脂肪酸总量的25.49%,不饱和脂肪酸(UFA)占脂肪酸总量的74.51%,EPA和DHA的含量分别为0.0211 g/100 g和0.158 g/100 g。可见,乌克兰鳞鲤“津新1号”是一个具有较高营养价值和保健功能的优良养殖品种。The nutritional components of muscle of Ukrainian scale carp“Jinxin No.1”were determined by biochemical method.The results showed that the protein content and fat content in muscle(fresh sample)was 18.00 g/100 g and 5.60 g/100 g,respectively.The total amino acid content(TAA)with 18 kind sofaminoacids was16.54 g/100 g.Among of them,8 kind sofhumanes sentialaminoacid (EAA)content was 6.91 g/100 g and 4 kind sofdeliciousa minoacid content was 6.27 g/100 g,accounting for 41.78%and 37.9%of to talaminoacids(TAA),respectively.There sultsshowed that the ratio of EAA tononessentialamino acids was 71.75%,which metthe FAO/who ideal protein source evaluation standard.The magnesium,zinc,selenium and othere lements were rich in muscle.There were 23 kind soff attyacids in muscle,in which the saturatedfattyacids(SFA)accounted for 25.49%of the totalfattyacids,and unsatu rated fattyacids(UFA)accounted for 74.51%of the to talfattyacids.EPA and DHA contents were 0.0211 g/100 g158 g/100 g.So it can be said that“Jinxin No.1”isan excellent breed with high nutrition alvalue and health function.
