摘  要:葡萄酒安全性是消费者的关注重点,葡萄酒中的二氧化硫(SO2)含量是影响葡萄酒安全性的一个重要指标。本文通过对常规葡萄酒、有机葡萄酒以及自然葡萄酒中SO2限量指标进行对比研究,对生产工艺优化降低SO2含量的可行性进行分析,以及对市售常规葡萄酒中SO2实测数据进行随机抽样分析,探究SO2限量指标降低的可行性,并给出合理的指标设定区间,为相关葡萄酒标准的制定提供理论参考。Wine safety has become the focus of consumers'attention.Sulfur dioxide(SO2)in wine is an important indicator of wine safety.The sulfur dioxide limit index of conventional wine,organic wine and natural wine were compared in this paper,the feasibility of production process optimization and reducing SO2 content were analyzed,and conducted random sampling analysis on the SO2 measured data of commercially available conventional wine to explore the feasibility of reducing the SO2 limit index.It also provided a reasonable index setting interval to provide a theoretical reference for the formulation of relevant wine standards.
