长竹蛏营养成分及微量元素含量测定与分析

摘　　要：测定了长竹蛏整体组织和内脏组织的脂肪、蛋白质、水分的含量以及磷、铁、钙、铜、锌、锰、镁、铅的含量.结果显示,长竹蛏蛋白质含量达64.6 g/100 g(干重),脂肪为7.9 g/100 g(干重),长竹蛏是一种低脂肪、高蛋白且富含多种微量元素的海产品.长竹蛏内脏组织对重金属的富集作用高于体外.污染重金属铅的含量低于国家标准限量.The contents of fat,protein,water,P,Fe,Ca,Cu,Zn,Mn,Mg and Pb in the whole and visceral tissues of Solen strictus were determined.The results showed that the content of protein was 64.6 g/100 g(dry weight)and the content of fat was 7.9 g/100 g(dry weight).The accumulation of heavy metals in internal organs was higher than that in vitro.The content of heavy metal lead is lower than the national standard limit.
