摘 要:本试验以马铃薯薯渣为主要原料,以黑曲霉、热带假丝酵母、解脂假丝酵母和啤酒酵母为协作发酵菌株进行好氧-厌氧固态发酵,以真蛋白增长率为评价指标,通过单因素试验与正交试验设计,研究以马铃薯薯渣为原料固态发酵菌体蛋白饲料的生产工艺。结果表明:最佳工艺条件为薯渣:麸皮(m/m)=85:15,硫酸铵添加量2%,培养温度32℃,培养时间72 h,黑曲霉+热带假丝酵母+解脂假丝酵母+啤酒酵母接菌量均为1%,水分65%~70%,pH自然,最佳条件下发酵产物中粗蛋白质和真蛋白含量分别为20.28%和18.40%,与未发酵物料相比,粗蛋白质和真蛋白含量分别增加了59.2%和194.4%,中试验证试验与优化工艺结果相一致。采用复合菌株固态发酵生产菌体蛋白饲料工艺能够显著增加发酵产物中的粗蛋白质和真蛋白含量,为马铃薯薯渣废弃资源利用提供新模式。Using potato dregs as main raw material to produce bacterial protein feed.Aerobic-anaerobic solid-state fermentation was carried out with Aspergillus niger,Candida tropicalis,Candida lipolytica and Saccharomyces cerevisiae as co-fermentation strains,with true protein content and true protein growth rate as evaluation indicators,through single factor test and orthogonal experiment design.The experimental design was carried out to study the production process of solid-state fermentation of bacterial protein feed using potato dregs as raw material.The results showed that the optimum conditions were potato residue:bran(m/m)=85:15,ammonium sulfate addition 2%,culture temperature 32℃,culture time 72 h,the amount of Aspergillus niger+Candida tropicalis+Candida lipolytica+Saccharomyces cerevisiae was 1%,the water content was 65%~70%,and the pH was natural.The content of crude protein and true protein in the fermentation product under the optimal conditions were 20.28%and 18.40%,respectively.Compared with unfermented materials,crude protein and true protein were increased by 59.2%and 194.4%,respectively,and the test results were consistent with the optimized process results.The solid protein fermentation of the composite strain to produce the bacterial protein feed process could significantly increase the crude protein and true protein content in the fermentation product,and provide a new model for the utilization of potato dregs waste resources.
