摘 要:目的:用电位滴定方法检测中药材甜瓜子原材料中酸价和过氧化值,为完善其质量标准提供参考。方法:本试验将甜瓜子粉碎成细颗粒,用石油醚对甜瓜子颗粒进行浸提,脱水过滤后用旋转蒸发仪减压蒸干石油醚,将浸提出的液体油脂物作为试样,用电位滴定法进行酸价和过氧化值的测定。结果:以《食品安全国家标准坚果与籽类食品》(GB 19300-2014)中对籽类的酸价及过氧化值的限度为标准,对8批甜瓜子原材料进行酸价和过氧化值的测定及分析,其中3批甜瓜子原材料的酸价超出了限度规定,所有批次的甜瓜子过氧化值均在限度内。结论:电位滴定检测方法操作简单、灵敏度高、精密度好,可准确测定甜瓜子原材料的酸价及过氧化值。甜瓜子富含不饱和脂肪酸,有酸败及氧化的可能性,作为原材料使用时其检验标准应当考虑增加对酸价、过氧化值的检测。Objective:To determine the acid value and peroxide value in Chinese herb medicine:seeds of Cucumis melo L by potentiometric titration,to provide a reference for improving its quality standards.Methods:The seeds of Cucumis melo Lwere crushed into fine particles,and then were extracted by the petroleum.After dehydration and filtration,the petroleum was evaporated under reduced pressure with a rotary evaporator.The acid value and peroxide value of the extraction were determined by potentiometric titration.Results:According to the limits of acid value and peroxide value of seeds in"National Food Safety Standard Nuts and Seed Food"GB 19300-2014,the acid value and peroxide value of 8 batches of seeds of Cucumis melo Lwere measured and analyzed.Among them,the acid value of three batches exceeded the limit,and the peroxide value of all batches of melon seeds was within the limit.Conclusion:The potentiometric titration method is with high sensitivity and good precision,and can accurately measure the acid and peroxide value of seed of Cucumis melo L,which are rich in unsaturated fatty acids and have the possibility of rancidity and oxidation.When the seeds of Cucumis melo L.are used as raw materials,the detection of acid value and peroxide value should subjoined in its inspection standard.
