摘  要:为了评估外源褪黑素处理对草莓果实采后品质的影响。本研究使用浓度为0.5 mmol/L褪黑素处理草莓果实,考察褐黑素处理对草莓果实腐烂发生率、重量损失、硬度、总可溶性固形物、可滴定酸、抗坏血酸、过氧化氢(H2O2)、丙二醛(MDA)、总酚和总黄酮等参数的影响。结果显示,草莓果实采收后使用浓度为0.5 mmol/L的褪黑素处理可显著减少腐烂发生率和重量损失,保持果实硬度和可滴定酸度,以及降低总可溶性固形物、H2O2和MDA含量,从而有效延缓草莓果实储藏期的腐烂。此外,0.5 mmol/L褪黑素处理可促进总酚和总黄酮的积累,从而提高抗氧化能力。然而,褪黑素处理对抗坏血酸含量有负面影响。总之,0.5 mmol/L浓度的褪黑素处理对新鲜草莓果实的采后品质具有积极影响。To evaluate the effect of exogenous melatonin treatment on postharvest quality of strawberry fruit. In this study, strawberry fruit was treated with melatonin at a concentration of 0.5 mmol/L. The incidence of decay,weight loss, hardness, total soluble solids, titratable acid, ascorbic acid, hydrogen peroxide(H2 O2), malondialdehyde(MDA), total phenolics and total flavonoids in strawberry fruit treated with melatonin were examined. The results showed that treatment of melatonin at a concentration of 0.5 mmol/L after strawberry fruit harvest significantly reduced the rate of decay and weight loss, maintained fruit firmness and titratable acidity, and decreased total soluble solids, H2 O2, and MDA content, so as to effectively delay the decay of strawberry fruit during storage period. In addition, 0.5 mmol/L melatonin treatment promoted the accumulation of total phenols and total flavonoids, thereby increasing the antioxidant capacity. However, melatonin had a negative effect on ascorbic acid content. In conclusion, the treatment of melatonin at a concentration of 0.5 mmol/L has a positive effect on postharvest quality of fresh strawberry fruit.
