摘 要:含铜铁素体不锈钢是一种新型结构与功能一体化的金属材料,具有延缓食品腐败的作用。采用平板计数法研究了430-Cu不锈钢的抗菌性能;通过模拟食品的保存环境和将430-Cu不锈钢与鲜榨果汁和新鲜鱼肉接触,检测了接触过程中的感官指标、微生物菌落总数及电导率的变化。结果表明:430-Cu不锈钢对大肠杆菌(Escherichia coli)的抗菌率达99.9%;与430-Cu不锈钢充分接触的食品具有良好的色泽、气味和状态,以及低的菌落总数和电导率,这进一步说明含铜铁素体不锈钢能抑制食品中微生物的繁殖,从而延缓食品的腐败进程。这为含铜铁素体不锈钢在食品保鲜领域的应用提供理论依据。Copper-bearing ferritic stainless steel is a new type of metal material with both mechanical and functional properties,and can serve the function of slowing food spoilage.The anti-bacteria capability of 430-Cu stainless steel was investigated by plate counting method.By simulating food preservation environment,and keeping 430-Cu stainless steel in full contact with fresh fruit juice and fish,sensory indexes,total number of microbial colonies and electrical conductivity in the process of preservation were measured.The results showed that(a)the anti-bacteria rate of 430-Cu stainless steel against Escherichia coli was as much as 99.9%;(b)the food in full contact with 430-Cu stainless steel possessed better color,smell and tissue status,lower bacterial count and electrical conductivity,further indicating that copper-bearing ferritic stainless steel can delay the spoilage process of food due to its inhibiting reproduction of microorganisms in food.This study provided research evidences for application of Cu-bearing ferritic stainless steel in the area of food preservation.
