摘 要:试验旨在探究饲粮中不同的谷氨酸渣添加水平对于肉羊的生长发育、屠宰性能和血液生化指标的影响。选取日龄、体重以及健康状况基本一致的波尔山羊和关中奶山羊杂交一代(60日龄)羔羊48只(公母羊各24只),按照单因素随机区组设计分为4组,每个试验组设3个重复,每个重复4只试验羊(2公2母),4组的精料补充料营养水平基本相同,其中谷氨酸渣的添加量分别为0(对照组)、2%、4%和6%,试验期共60 d。结果表明:在肉羊生长发育方面,2%组的平均日增重显著大于其他组(P<0.05),4%组精料采食量显著低于其他组(P<0.05);谷氨酸渣添加组肉羊饲料粗蛋白、钙、磷和饲料总表观消化率显著低于对照组(P<0.05),而2%组粗蛋白、钙和磷消化率显著高于4%组和6%组(P<0.05);在屠宰性能和肉品质方面,2%组和4%组的屠宰率显著高于对照组和6%组(P<0.05),4%组的眼肌面积显著高于其他3组(P<0.05),失水率对照组显著高于其他组(P<0.05),肌肉嫩度6%组显著高于其他组(P<0.05);随着谷氨酸渣添加量的逐渐增高,羊肉总氨基酸和必需氨基酸含量都有所增加,同时羊肉中饱和脂肪酸含量下降,不饱和脂肪酸含量提高;在血液生化指标方面,2%组的谷丙转氨酶含量显著低于其他3个组,而4%组的甘油三酯显著高于他3个组。综合本试验研究结果,肉羊精料补充料添加2%的谷氨酸渣可替代部分豆粕,能更好的提高肉羊生产性能并改善肉品质。This experiment was to explore the effects of the diets with different levels of glutamic acid residue on the growth performance,slaughter performance and blood biochemical indexes mutton goats.4860 d-old first-generation Boer-goat-x-Guanzhong-dairy-goat-crossbred lambs(24 males and females)of of similar weight and health status were selected and were divided into four groups based on a single-factor randomized block design.Each group had three replicates,and each replicate had four lambs(2 males and 2 females).The lambs were fed with concentrate of generally the same nutrient levels of nutrients but different levels of glutamic acid residue supplements for each groups:0 for the control group,2%for the 2%group,4%for the 4%group and 6%for the 6%group,respectively.The experiment lasted for 60 days.The results showed that the average daily gain of the 2%group was significantly higher than that of the other groups(P<0.05),and the concentrate intake of the 4%group was significantly lower than that of the other groups(P<0.05).The apparent digestibility of crude protein,calcium and phosphorus in the experimental groups were significantly lower than those in the control group(P<0.05),while the digestibility of crude protein,calcium and phosphorus in the 2%group was significantly higher than that in the 4%and 6%groups(P<0.05).In terms of meat quality,the slaughter rate of the 2%and 4%groups was significantly higher than that of the control group and the 6%group(P<0.05),the eye muscle area of the 4%group was significantly higher than that of the other three groups(P<0.05),the water loss rate of the control group was significantly higher than that of the other groups(P<0.05),and the muscle tenderness of the 6%group was significantly higher than that of the other groups(P<0.05).With the increase in glutamic acid residue supplement,the content of total amino acids and essential amino acids increased in the animals,while the content of saturated fatty acids decreased and the content of unsaturated fatty acids increased.The glu
