摘　　要：类胡萝卜素是一类重要的天然色素的总称,对于人类的健康起着非常重要的作用,并且人和动物自身不能合成,需要从外界摄取。类胡萝卜素的种类繁多,不同的类胡萝卜素具有不同的生理功能,其应用领域也非常广泛。本文综述了近年来国内外学者对类胡萝卜素的研究进展,阐述了类胡萝卜素的由来、理化性质和分类、常见类胡萝卜素的分布和作用功效,对人们合理的选择和利用类胡萝卜素有重要意义。Carotenoids are a kind of important natural pigments,which play a very important role in human health.Moreover,human and animals can not synthesize carotenoids themselves and need to be absorbed from the outside world.There are many kinds of carotenoids.Different carotenoids have different physiological functions,and their application fields are also very extensive.This paper reviews the research progress of carotenoids in recent years.The origin,physicochemical properties and classification of carotenoids,the distribution and function of common carotenoids were described.It is important for people to choose and utilize carotenoids reasonably.
