摘  要:含有可溶性多糖的饮食与胆固醇的降低呈正相关关系,可溶性多糖通过结合胆汁酸分子来降低血清胆固醇,尽管近些年的体内体外实验都证明了可溶性多糖对胆汁酸的吸附作用,但是二者之间的互作机制尚未明晰.本文主要从膳食可溶性多糖的分类与功能、胆汁酸的分类与功能、可溶性多糖与胆汁酸的互作机制等方面进行阐述,以期为多糖降低胆固醇奠定理论基础.There was a positive correlation between dietary soluble polysaccharide and cholesterol reduction.Soluble polysaccharides reduced serum cholesterol by binding to bile acid molecules.In recent years,in vitro and in vivo experiments have proved the adsorption effect of soluble polysaccharides on bile acids.But the interaction mechanism between soluble polysaccharide and bile acid is not clear.In this paper,the classification and function of soluble polysaccharide,the classification and function of bile acid,and the interaction mechanism of soluble polysaccharide and bile acid were discussed in order to lay a theoretical foundation for polysaccharide to reduce cholesterol.
