摘 要:人类创造了不同的饮食文化,并且成为一种最基础、最具亲和力的文化,经由这一文化符号去理解人类的交流、交往如何达成,许是一条可行之路。本文主要关注开设在马德里的中餐馆这一公共商业场所,围绕其各种饮食元素去观察文化迁移、交流、互动等文化实践,同时也关注2020年新冠疫情所带来的生存挑战和中餐业的自救。探讨经由海外中餐馆建构的文化生态,是如何推动了国外对中国文化的感知和期待以及中欧持续互通的可能。Humans have created varied food cultures,which have become the most basic and approachable culture.It is perhaps a feasible way to understand how human communication has been achieved through observing the exchange of food cultures.This article focuses on Chinese restaurants opened as public commercial places in Madrid,and observes cultural practices such as cultural migration,communication and interaction centering around various dietary elements.At the same time,this article also pays attention to the challenges brought by the COVID-19 pandemic to the catering industry and the self-help efforts of Chinese restaurants in Madrid,and explores how the cultural ecology created by overseas Chinese restaurants has promoted foreign perceptions and expectations of Chinese culture,as well as the possibility of sustained connectivity between China and Europe.
