摘  要:为了避免食品在生产过程中发生生物性、化学性、物理性因素的危害,增加食品安全问题,研发了一套专门的食品管理体系,称为危害分析和关键控制点,简称HACCP。通过深入分析危害分析和关键控制点的特征,结合白色金针菇(Flammulina velutipes)在采摘后的存贮和运输问题,将HACCP体系应用于白色金针菇采摘后的存贮和运输全过程。对可能存在的危害风险给出了对应的解决办法,有效降低白色金针菇采后存贮运输环节的损耗,同时保证了产品质量。In order to avoid the harm of biological, chemical and physical factors in food production process and increase food safety problems, a special food management system called hazard analysis and critical control point(HACCP) was developed.Through in-depth analysis of the characteristics of hazard analysis and critical control points, combined with the storage and transportation problems of white Flammulina velutipes after picking, HACCP system is applied to the whole process of storage and transportation of white F. velutipes after picking. The corresponding solutions to the possible hazard risks are given, which can effectively reduce the loss of storage and transportation links of F. velutipes, and ensure the product quality.
