摘 要:哈密瓜是高糖和热敏性物料,其干燥时间和干燥品质的控制一直是哈密瓜干燥过程亟待解决的关键技术问题。本文综述了哈密瓜等果蔬的干燥技术现状和装备应用现状,并对不同干燥方法及其干燥特性和干燥装备进行了对比分析。从预处理方式、联合干燥、装备升级三方面对哈密瓜片的应用前景进行了分析,旨在为哈密瓜新型干燥技术的开发和干燥装备的推广应用提供理论依据与技术支撑。Hami-melon is a high-sugar and heat-sensitive material.The control of drying time and drying quality is always the key technical problem to be solved in the Hami-melon drying process.This article summarizes the current state of drying technology and equipment application of Hami-melon and the different drying methods,drying characteristics and drying equipment were compared and analyzed.The application prospects of Hami-melon slices were analyzed from the aspects of pretreatment method,combined drying and equipment upgrade.The purpose was to provide theoretical basis and technical support for the development of Hami-melon’s new drying technology and the application of drying equipment.
