摘 要:随着生姜种植地区的增多和市场对高质量生姜制品需求的增长,生姜的产品开发已经成为生姜产业发展的趋势。全面介绍了生姜的高营养和药用价值研究情况,从原料/配方、工艺参数和主要功效等方面对目前研究较多的生姜饮品进行了全面整理归纳,介绍了生姜加工副产物的利用情况以及生姜新型保健产品的研发情况,旨在为中国生姜的开发利用提供参考和依据。With the increasing of ginger growing areas and the market demand for high-quality ginger products,the development of ginger products had become a trend in the development of the ginger industry.The high nutritional and medicinal value of ginger was introduced.The ginger drinks which were widely studied at present were summarized from the aspects of raw material and its formula,technological parameters and main efficacy.The utilization of ginger processing by-products and the development of new ginger health products were introduced,so as to provide reference and basis for the development and utilization of ginger in China.
