摘 要:食用菌特色酒店餐饮管理是食用菌特色旅游中的关键性环节。现有的食用菌特色酒店餐饮服务普遍具有地域性和养生性两大特征,但是也存在食用菌食品安全问题凸显、食用菌餐饮延展性服务不足等问题。因此,为了给食用菌特色旅游游客提供具有安全性、创新性和文化性的餐饮服务,提出酒店餐饮管理模式创新的策略。通过建立食用菌特色酒店餐饮游客管理信息系统和食用菌特色酒店餐饮安全管理系统,为消费者提供更多的餐饮信息和安全保障。同时,构建独具特色的食用菌酒店餐饮管理文化,对于现代食用菌特色旅游具有重要的现实意义。The catering management of edible fungi characteristic hotel is the key link of edible fungi characteristic tourism.The existing hotel catering services featuring edible fungi generally have two major characteristics of regional and vegetative nature, but there are also problems such as prominent food safety problems of edible fungi, insufficient extended service of edible fungi catering and nonstandard hotel catering management. Therefore, in order to provide safe, innovative and cultural catering services for tourists with edible fungi characteristics, the innovative strategies of hotel catering management model are proposed.Through the establishment of edible fungi hotel catering tourist management information system and edible fungi hotel catering safety management system, to provide consumers with more food and beverage information and security. At the same time, the establishment of a unique edible fungi hotel cater-ing management culture, for the modern edible fungi characteristic tourism has important practical significance.
