摘 要:在非洲猪瘟形势依然严峻、饲用抗生素全面禁用和环境保护压力持续增加的背景下,如何保障生猪健康优质安全生态养殖成为行业面临的巨大挑战。生物发酵饲料可以通过益生菌发酵改变饲料底物的理化性质、获得益生性中间代谢产物和扩大培养饲用的微生物体,从而改善饲料利用效率、提高生产性能、保障机体健康、改善猪肉品质,最终达到饲料资源开发、生猪健康养殖和优质猪肉生产的目的。本文主要综述了发酵菌株与饲料资源开发利用、发酵改善饲料品质的机制,以及发酵饲料在改善猪生产性能、肠道健康和猪肉品质等方面的应用,为生物发酵饲料在生猪健康生态养殖中的应用提供理论依据。Under the severe situation of African swine fever,the total ban of antibiotics in feed and in⁃creasing pressure of environmental protection,how to guarantee healthy,ecological,safe and high-quali⁃ty pig husbandry has become a major challenge for the industry.Biological fermented feed can change the physical and chemical properties of the substrates,produce intermediate metabolites and increase the number of probiotics,thereby improving the feed efficiency,digestion and absorption,animal growth and pork quality.The present review mainly aimed at fermenting strains and feed resources develop⁃ment,the mechanism of fermented feed nutrient improvement,the influence of fermented feed on por⁃cine performance,gut health and pork quality.Further,the development trend from the strain screen⁃ing,fermentation technology,and quality safety assessment three aspects was put forward.This work will provide theoretical basis for research and de⁃velopment and mechanism research of fermented feed.
