广东小耳花猪胴体与肉质性状分析

摘　　要：广东小耳花猪是广东粤西地区存栏量最大的地方猪种,为了解广东小耳花猪胴体与肉质性状,研究对70头壹号土两广小花猪品系开展体重、背膘测定,并挑选其中35头进行屠宰性能测定。结果显示,广东小耳花猪在375日龄时,体重为78.89 kg。广东小耳花猪在79.33 kg时屠宰率为72.45%,瘦肉率为40.76%,系水力为90.66%。结果表明壹号土两广小花猪品系在选育后仍保持优良的肉质特性。Guangdong Small-spotted pig is the largest local pig breed in the west of Guangdong Province.In order to understand the carcass and meat quality traits of Guangdong Small-spotted pig,the body weight and back fat of 70 pigs were measured,and half percent of them were selected for slaughter performance test.The results showed that the body weight of Guangdong Small-spotted pig was 78.89 kg at 375 days old.When the weight reaches 79.33 kg,the slaughter rate of Guangdong Small-spotted pig was 72.45%,lean meat rate was 40.76%,and water power was 90.66%.The results showed that Guangdong Small-spotted pig still maintained the characteristics of good meat quality after breeding.
