摘 要:以血橙皮为原料,无水乙醇溶液作为提取橙皮苷的溶剂,对橙皮苷提取工艺进行优化,并探究橙皮苷的抗氧化性。采用单因素试验与响应面试验相结合的方法,分析了超声功率、乙醇浓度、提取时间和料液比4个因素对血橙皮中的橙皮苷得率所具有的影响。结果表明,血橙皮中的橙皮苷提取的最优工艺参数为:提取时间20 min、超声功率80 W、料液比1:30(g/mL),当橙皮苷浓度达到0.6(mg/mL)时,对DPPH清除率为55.80%,对OH的清除率为64.02%。分析表明血橙皮渣中的橙皮苷对于DPPH自由基与羟自由基具有一定的清除作用。In this study,with the blood orange peel as the raw material and absolute ethyl alcohol solution used as the solvent for extracting hesperidin,the extraction process of hesperidin was optimized and the antioxidation of hesperidin was investigated.The effects of ultrasonic power,ethanol concentration,extraction time and ratio of material to liquid on the yield of hesperidin in blood orange peel were analyzed by combining the single factor test and response surface test.The results show that the optimal extraction parameters of hesperidin were as follows:20 minutes extraction time,80 W ultrasonic power,and 1:30 ratio of material to liquid(g/ml).When the hesperidin concentration reached 0.6(mg/ml),the DPPH removal rate was 55.80%,and the OH removal rate was 64.02%.The analysis shows that hesperidin had a certain removal effect on DPPH·and·OH free radicals.
