“豆腐宴”与旅游扶贫发展研究—以剑阁县为例

摘　　要：剑阁县作为省级贫困县,如何因地制宜的利用剑门豆腐宴饮食资源发展旅游,带动地区社会经济发展和贫困人口增收脱贫,成为具有研究价值的问题。本文通过对剑门关豆腐宴进行SWOT分析,再通过AHP层次分析法确定豆腐宴发展中内部优势、内部劣势、外部机遇和外部挑战各因素的重要性,为发展地域饮食推动旅游扶贫提供方向上的支撑。分析得出内部优势的权重最大为0.5492,内部优势各要素中,与历史文化的结合的权重最大为0.3374;其次,外部机遇权重为0.2120,其中各要素交通方式完善的权重最大为0.1184。内部劣势权重为0.1544,其中从事豆腐宴开发的人少的权重最大为0.0917。外部威胁权重0.0843,其中缺乏相关部门支持比重最大为0.0471。As a poverty-stricken county at the provincial level,Jiange County,how to use Jianmen tofu banquet food resources to develop tourism according to local conditions,promote regional social and economic development and increase the income of the poor population out of poverty,has become an issue of research value.This paper conducts a SWOT analysis of Jianmenguan Tofu Banquet,and then uses AHP analytic method to determine the importance of internal advantages,internal disadvantages,external opportunities and external challenges in the development of Tofu Banquet,and provides directions for the development of regional diets to promote tourism poverty alleviation Support.The analysis shows that the maximum weight of internal advantages is 0.5492,and among the various elements of internal advantages,the weight of combination with history and culture is the maximum of 0.3374;secondly,the weight of external opportunities is 0.2120,and the weight of each element’s perfect transportation mode is the maximum of 0.1184.The internal disadvantage weight is 0.1544,of which the weight of few people engaged in tofu feast development is 0.0917.The weight of external threats is 0.0843,of which the lack of support from relevant departments accounts for the largest proportion of 0.0471.
