摘 要:目的了解不同煮茶方式对氟离子溶出的影响,为今后采取干预措施提供依据。方法收集山南市16份砖茶作为样本,模拟居民平时的煮茶习惯,选取三种主要煮茶方式进行实验,方式一:模拟居民一次投茶一次加水长时间浸泡茶叶的煮茶方式,取12.50 g砖茶加纯水500 ml,恒温99℃水浴保温,每隔3 h取样15 ml,共取样4次;方式二:模拟居民一次投茶多次加水反复煮沸的煮茶方式,取10 g砖茶加纯水200 ml,煮沸,每隔5 min取样15 ml,共取样6次;方式三,用不同温度模拟不同海拔高度,取5 g砖茶加200 ml纯水分别在80℃、90℃、100℃水浴锅中保温25 min后取样15 ml,然后通过离子色谱法测定茶水中氟离子含量。结果方式一,共获取了64份茶水样品,氟离子平均浓度为86.21 mg/L,居民茶氟平均日摄入量为232.77 mg;方式二,共获得了96份茶水样品,氟离子平均浓度为47.68 mg/L,居民茶氟平均日摄入量为128.74 mg;分别在80℃、90℃、100℃条件下煮茶,共获取了48份茶水样品,氟离子平均浓度分别为72.97 mg/L、75.90 mg/L、130.60 mg/L,居民茶氟平均日摄入量分别为197.27 mg、205.17 mg、353.04 mg。不同温度煮茶,茶水中氟离子浓度差异有统计学意义(F=7.797,P=0.011)。上述三种煮茶方式,风险商均大于1。结论西藏地区居民饮用砖茶的生活方式具有较高的氟中毒风险,应积极采取预防措施。Objective To understand the influence of different tea brewing on the dissolution of fluoride ions,and to provide a basis for future intervention.Methods To Collect 16 brick teas from Shannan City as samples to simulate the residents’usual tea-making habits,and select three main tea-making methods for experiment.Method a:Simulate the tea brewing method of residents who put tea once and add water for a long time soaking tea leaves,take 12.50 g brick tea Add 500 ml of pure water,keep it in a water bath at a constant temperature of 99℃,and sample 15 ml every 3 h for a total of 4 samples;Method b:Simulate the tea brewing method of residents throwing tea at one time,adding water and repeatedly boiling,take 10 g brick tea and 200 ml of pure water,boil it,and sample 15 ml every 5 min for a total of 6 samples;Method c:Simulate different altitudes with different temperatures.Take 5 g of brick tea and 200 ml of pure water in a water bath at 80℃,90℃,and 100℃for 25 minutes,then sample 15 ml,and then measure the fluoride ion content in the tea by ion chromatography.Results Method a:A total of 64 tea samples were obtained.The average concentration of fluoride ion was 86.21 mg/L,and the average daily intake of fluorine was 232.77 mg.Method b:A total of 96 tea samples were obtained.The average concentration of fluoride ion was 47.68 mg/L,and the average daily intake of fluoride in tea was 128.74 mg.A total of 48 tea samples were obtained by boiling tea at 80℃,90℃and 100℃,respectively.Theaverage concentration of fluoride ion was 72.97 mg/L,75.90 mg/L and 130.60 mg/L,respectively.The average daily intake of fluoride in tea was 197.27 mg,205.17 mg and353.04 mg,respectively.The difference of fluoride concentration in tea at different temperatures was statistically significant(F=7.797,P=0.011).For the above three tea brewing methods,the risk quotient is greater than.Conclusion The lifestyle of drinking brick tea in Xizang has a high risk of fluorosis,so preventive measures should be taken.
