摘 要:柠檬醛是一种天然广谱抗菌剂,由于其具有香味浓郁、来源广泛、抗菌性强等特点,而成为抗菌领域的研究热点。柠檬醛存在稳定性差、易挥发、易氧化等缺点,国内外学者针对柠檬醛稳定性的改良开展了系列研究。详细阐述了利用喷雾干燥法、水包油乳液、纳米乳液和分子复合物包合法等柠檬醛微胶囊技术,以及合成抗氧化剂、天然抗氧化剂的抗氧化技术等进行柠檬醛稳定性改良的研究进展,并对柠檬醛在竹材防霉中的应用前景进行了展望。Citral is a kind of natural broad-spectrum antimicrobial agent.Because of its characteristics such as rich fragrance,wide source and strong antimicrobial activity,it has become a research hotspot in the field of antimicrobial.Citral has the disadvantages of poor stability,volatile and easy oxidation,domestic and foreign scholars have carried out a series of studies to improve the stability of citral.The microencapsulation techniques of citral by spray drying,oil-in-water emulsion,nanoemulsion and molecular compound encapsulation were described in detail.The research progress of improving the stability of citral by synthetic antioxidants and natural antioxidants was also reviewed in detail.The application prospect of citral in bamboo mildew resistance was also prospected.
