摘  要:以连麦抗1(LMK1,白粒小麦)、CM-L3(蓝粒小麦)和CM-Z2(紫粒小麦)为试验材料,分析了不同粒色小麦籽粒色素及功能营养成分的积累规律。结果表明:小麦籽粒中叶绿素含量表现为先增后降的变化趋势并在花后14 d达到最大值,且连麦抗1籽粒中的叶绿素含量高于CM-Z2和CM-L3的;类胡萝卜素的积累表现为CM-Z2和CM-L3在花后14 d出现峰值,而连麦抗1在花后21 d出现峰值;CM-L3和CM-Z2籽粒中花青素含量均呈逐渐增加的趋势,且前者的含量低于后者的含量,而连麦抗1籽粒中花青素含量很低且在各时期基本上无差异;不同品种(系)籽粒中微量元素Fe和Zn的积累均表现为CM-Z2>CM-L3>连麦抗1,而Mn、Cu含量存在品种(系)间差异,但未与籽粒颜色表现出显著的相关性;在灌浆前期,白粒小麦籽粒中的总黄酮、赖氨酸及色氨酸含量较高,而在灌浆中后期紫粒小麦籽粒中的总黄酮、赖氨酸及色氨酸含量显著高于白粒小麦和蓝粒小麦的。LMK1(white grain),CM-L3(blue grain)and CM-Z2(purple grain)were used to analyze dynamic accumulation of pigment and nutrients in grains in the paper.The results showed that chlorophyll content represented“low-high-low”trend,with the highest level at 14 days after anthesis,and it was higher in grain of LMK1 than that of CM-L3 and CM-Z2.The maximum value of carotenoids content appeared at 14 days after anthesis in grain of CM-L3 and CM-Z2 while it appeared at 21 days after anthesis in grain of LMK1.Anthocyanin content increased gradually in CM-L3 and CM-Z2,while it showed no distinct change in LMK1.The highest content of anthocyanin was tested in grain of CM-Z2,while the lowest in grain of LMK1.Content of Fe and Zn tested in grain with different colors showed CM-Z2>CM-L3>LMK1,while content of Mn and Cu were different among different materials,but showed significant correlation with grain color.Content of total flavanone,lysine and tryptophan at middle and late stage of grain filling in grain of CM-Z2 was higher than CM-L3 and LMK1 while they were the highest in LMK1 at the early stage of grain filling.
