摘  要:肌内脂肪是指肌纤维之间或肌细胞内积累的脂肪。肌内脂肪含量影响肌肉的多汁性、剪切力和嫩度等感官品质,是影响动物肌肉品质的重要因素,与肉品质高度正相关。牛羊作为主要的反刍动物,其肌肉具有较高的营养价值,深受消费者喜爱,而牛羊肌肉肌内脂肪含量受动物品种、遗传和营养等因素的影响。文章综述了遗传、管理和营养等因素对牛羊肌肉肌内脂肪沉积的影响,以期为改善牛羊肉品质提供理论参考。Intramuscular fat refers to the fat accumulated between muscle fibers or within muscle cells. The content of intramuscular fat affects the sensory qualities of muscle such as juiciness, shearing force and tenderness, and is an important factor affecting the muscle quality of animals, which is highly positively correlated with meat quality. As the main ruminants, cattle and sheep have high nutritional value in their muscles, which is deeply loved by consumers. However, the intramuscular fat content of beef and mutton is affected by animal species, heredity and nutrition. Therefore, this article reviews the effects of heredity, management and nutrition on intramuscular fat deposition of cattle and mutton, in order to provide a theoretical reference for improving the muscle quality of beef and mutton.
