陆羽《茶经》水之意象分析——兼论汲水煮茶与道家哲学精神

摘  要:水的择取和烹煮对茶之真味真香的激发有着至关重要的作用,水品决定茶品,故有"水为茶之母"的说法。陆羽《茶经·五之煮》详细记载了烹茶之法,以及对水次第品级的等级排列。在《茶经·六之饮》中陆羽将水品的评判视为"茶之九难"的核心,可见宜茶之水鉴别之重要。"水"的意象在道家视域中具有特殊的意义,水"几于道"的无为品格和其对本真自性场域的开显,使其在诸形万物中成为"道"的现实表征。故而对宜茶之水的择取、烹煮和育华,便成为温润滋养茶叶和成就茶人精行体道的契点。The selecting and boiling of water plays a crucial role in stimulating the true taste and aroma of tea.Water quality determines the quality of tea,hence there is a saying that"water breeds tea".In the fifth edition of Tea Classics,Lu Yu records the preparation of brewing tea and ranking of water level in detail,who regards the water quality judgment as the core of"the nine difficulties of tea"in the sixth edition of Tea Classic,showing the importance of proper identified water for brewing tea.The image of"water"has a special meaning in the vision of Taoism.Water becomes the realistic representation of the Way(Dao)in all forms,because of obtaining the inaction(Wu Wei)character near to the Way(Dao)and revealing the realization field of genuine nature for individual life.Therefore,the selecting,boiling and breeding of proper identified water for tea have become the key points for the nourishment of tea and achievement of experiencing the Way(Dao)for tea masters.
