摘  要:疫情促使"新工科"专业人才培养的教学方法发生变革。如何在保证教学质量的前提下完成线上教学和线上考核,是对每位授课教师提出的挑战。本文以《焙烤食品工艺学》课程为例,设计线上理论教学和线上实践教学过程、线上考核内容和评价标准,并进行具体实施。教学实践证明,利用雨课堂合理设计教学各个环节,引导和督促学生线上学习,带动学生深入课堂,充分体现了以"学生为中心"的线上教学新模式,实现预期课程目标。The epidemic has led to changes in the teaching methods for the training of "new engineering" professionals. How to complete the online teaching and online assessment under the premise of ensuring the teaching quality is a challenge to every teacher. Taking the course of Baked Food Technology as an example, this paper designs the online theoretical teaching and online practical teaching process, the online assessment content and evaluation criteria, and implements them in detail. The teaching practice has proved that the reasonable design of each teaching link in the rain classroom can guide and urge students to study online, drive students to go deep into the classroom, fully embodies the "student-centered" online teaching mode, realize the expected course goal.
