摘 要:目的了解山东省2020年新收小麦中15种元素含量水平,为粮食安全提供科学的数据。方法2020年6月,在山东省16地市随机采集新收小麦样品,采用电感耦合等离子体质谱法(ICP-MS)测定小麦中15种元素的含量;依据《GB2762—2017食品安全国家标准食品中污染物限量》对样品中铅、铬、镉、汞、砷超标情况进行判定;采用单因子污染指数法和内梅罗综合污染指数法进行评估,并与文献值进行比较。结果320份小麦样品中铝、铜、钒、锰、钡的检出率为100%,镍、硒、锂、锡、锑的检出率分别为99.69%,97.81%,69.37%,54.50%,0.62%。铅超标2份,超标率0.62%,铬、镉、汞、砷均未超标,这5种元素单项污染指数均不超过0.7,综合污染指数为0.198,污染程度处于安全水平。结论通过不同地区粮食中元素含量比较,山东省2020年新收小麦中元素含量无明显异常。Objective To investigate the contents of 15 elements in wheat in Shandong Province in 2020,and to provide the scientific data for food security.Methods 320 wheat samples were randomly collected from 16 cities in Shandong Province in June 2020.The samples were tested for 15 elements by using Inductively Coupled Plasma Mass Spectrometry(ICP-MS).According to GB 2762-2017 National Food Safety Standard-Limits of Contaminants in Food,the excess of Pb,Cr,Cd,Hg and As in the samples were judged.The pollution degrees of 5 elements in wheat were evaluated by using single factor pollution index and Nemerow comprehensive pollution index,and the element contents were compared with the values reported in literature.Results The detection rates of Al,Cu,V,Mn and Ba were 100%,and the detection rates of Ni,Se,Li,Sn and Sb were 99.69%,97.81%,69.37%,54.50%and 0.62%,respectively.For Plumbum,there were 2 samples exceeded the national limit standard,with the exceeding rate of 0.62%,whileother four elements of Cr,Cd,Hg and As in the wheat samples did not exceed the standards.The single pollution index of these five elements was less than 0.7,and the Nemerow comprehensive pollution index was 0.198,which were all below the limits of safety.Conclusion Compared with other regions,the element contents of the newly harvested wheat in 2020 in Shandong Province are in the normal ranges.
