摘  要:鸡蛋品质检测是其生产加工、储藏以及运输过程中的重要环节,能有效保障食品安全和消费者权益。传统方式以人工观察及化学分析为主,在应用过程中成本高、效率低、损耗大,无法满足工业化生产需求。近年来随着计算机技术的不断发展,以机器视觉、声学检测、光谱分析、电子鼻等为代表的无损检测技术取得了较大进步。文章选取了鸡蛋裂纹和新鲜度作为主要目标,分别阐述了上述新型无损检测技术的分析原理和取得的阶段性成果,并总结了目前存在的各种问题,包括样品影响、外界干扰、特征值提取、模式识别算法等,以更好地开展后续研究,加快无损检测技术在实际生产中的应用步伐。The detection of egg quality is an important link in the process,storage and transportation of production,which can effectively protect food safety and consumers’ rights.Traditional methods mainly focus on artificial observation and chemical analysis,which will not meet the needs of industrial production bacause of high cost,low efficiency and large loss in the application process.In recent years,with the continuous development of computer technology,non-destructive testing technology has made great progress,such as machine vision,acoustic detection,spectral analysis,electronic nose,etc.In this paper,the egg crack and freshness are selected as the main objectives,and the analysis principle,phased achievements of the above-mentioned new non-destructive testing technology are described respectively,and the existing problems are summarized,including sample influence,external interference,eigenvalue extraction,pattern recognition algorithm,etc,so as to better carry out follow-up research,speed up the application of non-destructive testing technology in actual production.
