摘 要:目的分析山东省8地市小麦中Na、Mg、Al、K、Ca、V、Cr、Mn、Fe、Ni、Cu、Zn、As、Se、Cd、Pb元素含量,研究小麦元素溯源模型。方法微波消解-ICP-MS测定161份样品中元素含量,利用主成分分析和元素含量比值进行溯源分析。结果 8地市样品中As、Pb含量均值分别为36.95、53.82μg/kg,符合国家食品安全标准;Cr、Cd、Cu、Zn、Se超标率分别为1.2%、1.2%、1.2%、0.6%、0.6%。东营样品Na、As含量最高,分别为70.14 mg/kg、57.62μg/kg;潍坊K含量最高,为5.09 g/kg;威海Mn、Ni含量最高,分别为44.77、1.28 mg/kg;淄博Cd含量最低,为14.36μg/kg。Mg/K、Mn/K、Na/Mn、Fe/As比值可对鲁中、鲁南、鲁东、鲁北进行完全区分,参考范围分别为:鲁中Mg/K(0.286-0.297)、Mn/K(5.538×10^(-3)-6.158×10^(-3))、Na/Mn(1.505-1.805)、Fe/As(1.438×10^(3)-1.734×10^(3));鲁南Mg/K(0.254-0.268)、Mn/K(7.355×10^(-3)-8.535×10^(-3))、Na/Mn(0.583-0.748)、Fe/As(2.536×10^(3)-3.754×10^(3));鲁东Mg/K(0.269-0.287)、Mn/K(8.936×10^(-3)-10.501×10^(-3))、Na/Mn(1.186-1.446)、Fe/As(1.817×10^(3)-2.564×10^(3));鲁北Mg/K(0.303-0.341)、Mn/K(4.210×10^(-3)-5.294×10^(-3))、Na/Mn(2.787-4.599)、Fe/As(0.785×10^(3)-1.312×10^(3))。结论计算Mg/K、Mn/K、Na/Mn、Fe/As元素含量比值,参照4地区参考范围,可对山东省小麦产地进行有效溯源。Objective To analyze the elemental contents of Na,Mg,Al,K,Ca,V,Cr,Mn,Fe,Ni,Cu,Zn,As,Se,Cd,and Pb in wheat in eight cities of Shandong Province and study the elemental traceability model of wheat.Methods Microwave ablation-ICP-MS was used to determine the elemental contents in 161 samples,and traceability analysis was performed using principal component analysis and elemental content ratios.Results The average values of As and Pb contents in the samples from eight cities were 36.95μg/kg and 53.82μg/kg,which were in accordance with the national food safety standards;the exceedance rates of Cr,Cd,Cu,Zn and Se were 1.2%,1.2%,1.2%,0.6%and 0.6%,respectively.Dongying samples had the highest Na and As content,70.14 mg/kg and 57.62μg/kg,respectively;Weifang had the highest K content,5.09 g/kg;Weihai had the highest Mn and Ni content,44.77 mg/kg and 1.28 mg/kg,respectively;Zibo had the lowest Cd content,14.36μg/kg.The 95%confidence intervals of Mg/K,Mn/K,Na/Mn and Fe/As,could be used to completely distinguish the central,south,east and north Shandong:central Shandong:Mg/K(0.286-0.297),Mn/K(5.538×10^(-3)-6.158×10^(-3)),Na/Mn(1.505-1.805),Fe/As(1.438×10^(3)-1.734×10^(3));southern Shandong:Mg/K(0.254-0.268),Mn/K(7.355×10^(-3)-8.535×10^(-3)),Na/Mn(0.583-0.748),Fe/As(2.536×10^(3)-3.754×10^(3));eastern Shandong:Mg/K(0.269-0.287),Mn/K(8.936×10^(-3)-10.501×10^(-3)),Na/Mn(1.186-1.446),Fe/As(1.817×10^(3)-2.564×10^(3));northern Shandong:Mg/K(0.303-0.341),Mn/K(4.210×10^(-3)-5.294×10^(-3)),Na/Mn(2.787-4.599),Fe/As(0.785×10^(3)-1.312×10^(3)).Conclusion The element ratio of Mg/K,Mn/K,Na/Mn and Fe/As can be used in tracing the wheat origin in Shandong Province with reference to the four cities.
