摘 要:为提高葡萄副产物的利用率,提高葡萄副产物的价值。以葡萄籽超微粉为材料,通过单因素实验设计,对粉体流动性、片重差异、硬度、脆度、崩解时间等指标进行测定,利用D-最优混料设计优化,并结合模糊数学方法进行感官评价,从而探究葡萄籽超微粉压片糖果最佳工艺条件。结果表明,当葡萄籽超微粉,微晶纤维粉,预胶化淀粉,甜菊糖和柠檬酸添加质量分数分别为71%、19%、7%、1.2%和0.9%,在此配方下制得的压片糖果外表光滑、口感细腻,酸甜适中,片重差异±2.7%,硬度为49.8N,脆度为0.83%,崩解时间13.4 min,此条件下通过响应值拟合分析得到的回归模型(P<0.001)极显著,R^(2)=98.09%。研究为进一步综合利用葡萄副产物提供了科学理论依据,促进了葡萄籽产品的开发。In order to improve the utilization rate of grape by-product and its value,in this paper,grape seed ultrafine powder was used as the material combined with the single factor experiment design to measure the indicators such as powder fluidity,sheet weight difference,hardness,brittleness,disintegration time and so on.By using D-optimal mixture design optimization and fuzzy mathematical method for sensory evaluation,the best technological conditions of grape seed ultrafine powder pressed candy were explored.The results showed that the mass fraction of grape seed superfine powder,microcrystalline fiber powder,pregelatinized starch,stevia sugar and citric acid were 71%,19%,7%,1.2%and 0.9%,respectively and the tablet candy prepared had smooth appearance,delicate taste,moderate acidity and sweetness under this formula.At the same time,the weight difference was±1.35%,the hardness was 49.8 N,the brittleness was 0.83%,and the disintegration time was 13.4 min.The regression model obtained by response value fitting analysis was extremely significant(P<0.001),R^(2)=98.09%.This study provides a scientific theoretical basis for further comprehensive utilization of grape byproducts,and promotes the development of grape seed products.
