摘　　要：子房是植物重要的繁育器官,具独特营养物质。为了解睡莲子房提取物的营养成分组成情况,采用国家标准检测方法对其蛋白质、粗脂肪、氨基酸、各种矿质元素、可溶性糖、灰分、VC进行检测,并对其抗氧化功效进行评价。结果显示,蓝鸟睡莲子房提取物中蛋白质含量740 mg/hg,粗脂肪含量700 mg/hg;含有17种氨基酸,总氨基酸含量667 mg/hg,必需氨基酸159 mg/mL,谷氨酸含量高达150 mg/hg;灰分含量310 mg/hg,可溶性糖含量34.2 mg/hg,钙、磷、钾含量分别为9.7、31.6、72.1 mg/hg,铁和VC未检出。综合分析显示,蓝鸟睡莲子房提取物具有独特的营养价值及一定的抗氧化作用,可作为一种重要的健康食品开发原料。Ovary is an essential reproductive organ of plant,and contains specific nutrients.Nymphaea'blue bird'is a kind of tropical water lily widely dispersed in the world.An attempt was made to analyze the nutrient composition of ovaries of Nymphaea‘blue bird’.Ovaries of Nymphaea‘blue bird’were collected and extracted.The contents of proteins,crude fats,amino acids,mineral elements,soluble sugar,ash and vitamin C in the extracted ovaries were determined,and the antioxidant activities of the extracted ovaries were evaluated.The results showed that the ovary extracts contain proteins 740 mg·hg-1,crude fats 700 mg·hg-1,17 detectable amino acids,total amino acids 667 mg·hg-1,essential amino acids 159 mg·mL-1,glutamic acid 150 mg·hg-1,ash 310 mg·hg-1,soluble sugar 34.2 mg·hg-1,Ca 9.7 mg·hg-1,P 31.6 mg·hg-1,and K 72.1 mg·hg-1,and that the contents of Fe and vitamin C were undetectable in the ovary extract.In conclusion,the ovary extract of Nymphaea‘blue bird’has unique nutritional value and some antioxidant activities,and may serve as a new raw material for preparation of functional food.
