摘  要:以药食兼用真菌榆黄蘑(Pleurotus citrinopileatus Sing.)为研究对象,从细胞水平上观察分析榆黄蘑菌丝体的形态结构,为榆黄蘑的初步鉴定奠定了基础。通过气相色谱-飞行时间质谱(GC-TOF-MS)检测榆黄蘑菌丝体中具有较高营养价值的糖类、脂肪酸、氨基酸、黄酮等多种初级与次级代谢产物。通过分析不同碳源、氮源对榆黄蘑液体发酵菌丝体生物量及其主要代谢物的影响,发现榆黄蘑液体发酵的最佳碳源为葡萄糖,最佳氮源为黄豆粉,获得的榆黄蘑菌丝体生物量为13.90 g·L^(-1),菌丝体中多糖产量为429.18 mg·L^(-1),蛋白质的产量为2 007.52 mg·L^(-1),黄酮产量为40.84 mg·L^(-1)。研究结果为工业化大规模发酵生产榆黄蘑菌丝体及其代谢产物奠定了理论基础。The medicinal and edible fungi Pleurotus citrinopileatus Sing. as the research object, the morphological structure of the mycelium was observed and analyzed from the cellular level, which laid the foundation for the preliminary identification of the P. citrinopileatus. The results showed that the mycelium of P. citrinopileatus contained with higher nutritional value like carbohydrate, fatty acid, amino acid, flavonoids and other primary and secondary metabolites by gas chromatography-time-of-flight mass spectrometry(GC-TOF-MS), so it had high nutritional value. The effects of different carbon and nitrogen sources on mycelium biomass and main metabolites of P. citrinopileatus were analyzed, and the results showed that the best carbon source was glucose and the best nitrogen source was soybean powder. The mycelium biomass was 13.90 g·L^(-1), polysaccharide production was 429.18 mg·L^(-1), protein production was 2 007.52 mg·L^(-1), and flavonoids production was 40.84 mg·L^(-1). The study result laid an important theoretical foundation for large-scale fermentation production of P. citrinopileatus mycelium and its metabolites.
