摘 要:大豆抗原蛋白作为一种致敏蛋白,进入动物机体后,能引起水生动物肠道过敏反应和氧化损伤,破坏肠道结构,降低机体消化吸收功能,从而抑制水生动物的生长发育,导致大豆蛋白在水生动物配合饲料中应用受限。添加可靠的免疫添加剂可以缓解大豆抗原蛋白引起的水生动物肠道损伤,从而提高大豆蛋白的利用率。本文对大豆抗原蛋白对水生动物肠道组织结构、生长发育、消化酶活性、抗氧化能力和肠道菌群的影响进行了系统综述,并提出了由大豆抗原蛋白引起的水生动物肠道损伤的改善对策,为提高大豆蛋白源的利用率,缓解我国水产配合饲料对鱼粉资源的依赖,优化饲料配方,降低饲料成本提供理论依据。As an allergenic protein,soybean antigen protein cause intestinal allergic reaction and oxidative damage in aquatic animals,destroy intestinal structure,reduce digestion and absorption function,and inhibit the growth and development of aquatic animals.So the application of soybean protein in aquatic animal feed is limited.In order to overcome this problem,it is an effective way to find safe and reliable immune additives to alleviate intestinal injury of aquatic animals caused by soybean antigen protein and to improve the utilization rate of soybean protein.The previous research results showed that adding functional feed additives such as sodium butyrate,acetylcysteine and glutamine could effectively alleviate intestinal damage of aquatic animals caused by soybean antigen protein.This paper summarized the effects of soybean antigen protein on intestinal structure,growth and development,digestive enzyme activity,antioxidant ability and intestinal flora of aquatic animals,and put forward some countermeasures to improve intestinal injury of aquatic animals caused by soybean antigen protein.This paper aimed to provide theoretical basis for improving the utilization rate of soybean protein source,alleviating the dependence of aquatic feed on fish meal resources in China,optimizing feed formula and reducing feed cost.
