摘 要:试验研究尿素氨化处理对桑叶中营养成分和生物活性物质含量的影响。在饲料桑品种湖桑32号的风干桑叶中添加3%和6%尿素进行氨化处理,测定处理后的桑叶营养成分和生物活性物质含量。结果显示,氨化后桑叶干物质中粗蛋白质、粗脂肪和钙含量均显著升高(P<0.05),总黄酮、生物碱和单宁含量显著降低(P<0.05),单宁含量最大降幅达85%,总多糖和总酚酸含量无显著影响(P>0.05)。试验表明,氨化处理可以提高桑叶的营养价值。The experiment studied the effect of urea ammoniation treatment on the nutrient composition and biologically active substance content in mulberry leaves. Air-dried leaves of fodder mulberry stain Husang 32 were treated with 3% or6% urea for ammoniation, then samples were taken for measuring the content of nutrients and biologically active materials. The results showed that the contents of crude protein, ether extract and Ca were significantly increased in ammoniated mulberry leaves(P<0.05). The contents of total flavonoids, alkaloids, and tannin were significantly decreased in ammoniated mulberry leaves(P<0.05), with a maximal decrease of 85% detected in the tannin content. The content of total polysaccharides and total phenolic acids was unaffected by ammoniation procedures(P>0.05). The experiment indicates that the treatment of ammoniation can improve the nutritive value.
