摘 要:集中消毒餐饮具作为公用物品主要被使用于餐饮消费环节,其卫生质量关系到广大消费者身体健康。作为食品安全和公共卫生监管的一项重要内容,餐饮具集中消毒行业卫生状况受到全社会广泛关注,有关的调查和研究也逐渐开展。我们从行业基本情况、消毒效果监测分析和监管对策研究3个方面,对我国餐饮具集中消毒行业的现状进行综述,为加强公共卫生和食品安全管理提供参考。As a public item,centralized disinfection tableware is mainly used in the catering consumption link. Its hygiene quality is related to the health of consumers. As an important part of food safety and public health supervision,the sanitation status of the centralized disinfection industry of tableware has received widely attention from the whole society. Related investigations and researches have gradually been carried out. From the basic situation of the industry,monitoring and analysis of disinfection effects,and research on regulatory countermeasures,we sort out the current situation of the centralized disinfection industry of tableware in our country,and provide references for strengthening public health and food safety management.
